Recipe by Jeff Mauro - Show: The Kitchen Episode: Apres Ski Bites
Last weekend I was watching The Kitchen on the Food Network, one of my favorite shows,
and Jeff Mauro was making this chili recipe that looked amazing. Something a little different than the traditional ground beef and bean chili. I thought it would be perfect for my casual Christmas dinner at home with the kiddos. However, before making it for the holiday, I wanted to give it a try first to test it out.
This recipe did not disappoint...sooooo much flavor! The small chunks of real steak cooked low and slow for 2 hours made this dish incredibly tender and delicious. I made a few adjustments with the ingredients. I only used 2 1/2 lbs of chuck eye roast instead of 4. I could not find ancho chili powder so I added 1 T chili powder + 1 T ground chipotle chili which gives it a nice kick.
Of course the accompaniments are a key ingredient that adds extra flavor and texture to the chili. I love the french fried onions, sour cream and sliced avocado (not shown). Feel free to get creative and experiment with different topings.
