Shrimp Rice Bowl

Ingredients

  • white or brown rice

  • raw medium or large shrimp peeled and deveined

  • edamame

  • shredded purple cabbage

  • avocado, sliced

  • shredded carrots

  • cucumber slices

  • Sriracha mayo (mayo, sriracha sauce + rice vinegar)


Instructions

1. Preheat the oven to 400 degrees.

2. Arrange the shrimp on a baking sheet and drizzle with olive oil, Toss. Sprinkle evenly with a little salt and pepper. Bake for 9 minutes.

3. In a bowl, combine good mayonnaise, sriracha sauce (as little or as much as you like) and a little splash of a rice vinegar.

4. To serve, place the rice, and shrimp in a bowl. Add the remaining ingredients and drizzle the Sriracha mayo on top.
