Roasted Spaghetti Squash with Brown Sugar + Butter



Ingredients

  • 1 spaghetti squash, halved lengthwise and seeded

  • 2 T of butter, softened + 4 T cold butter

  • 4 T of brown sugar

  • salt + pepper to taste


Instructions

1. Preheat the oven to 400°F.

2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.

3. Spread 1 T of softened butter oven the flesh of each squash half.

4. Place the squash halves on a parchment lined sheet pan, cut side down.

5. Bake for 40 minutes, or until the flesh is tender when pierced with a fork.

6. Remove the squash from the oven and carefully flip each half over.

7. Add 2 T cold butter to each half.

8. Sprinkle 2 T brown sugar on each half, and season with salt + pepper.

9. Return the squash to the oven and bake for an additional 10 minutes.

10. Using a fork, gently scrape the flesh of the squash.

11. Seve in the squash halves or spoon into a serving dish.
