Ingredients
2 butternut squash
4 T melted butter
1 T honey
Kosher salt
pepper
Instructions
1. Preheat the oven to 400°F.
2. Cut the squash in half lengthwise and scoop out the seeds from the center.
3. Place the squash halves on a parchment lined baking sheet, open side up.
4. In a small bowl, mix together the melted butter and honey.
5. Drizzle the butter and honey mixture evenly over the open side of the squash halves.
6. Sprinkle with salt and pepper.
7. Place in the oven for 45 minutes to an hour, until it becomes tender. The cooking time may vary depending on the size of the squash.
8. To check for doneness, insert a fork into the thickest part of the squash.
9. Serve the squash as a side dish.
