My favorite show on the Food Network is "The Kitchen" at 8:00 AM on the weekends , which includes some amazing chefs, Geoffrey Zakarian, Jeff Mauro and Katie Lee. If you have never seen it, it's worth watching an episode. I'm always inspired to cook at least one of the recipes from the show.
OH MY GOODNESS this is fabulous! I knew it would be and it's really not complicated at all. Be sure to get the potatoes CRISPY on MEDIUM heat, so its easier to flip, using a WIDE spatula, plus it makes this extra delicious. I used a cast iron skillet. For an extra extra-crispy hash brown, I transferred the pan in the oven for 10 minutes, as the recipe suggests. DO NOT skip wrapping a kitchen towel or cheese cloth around the grated potatoes and onions to squeeze out the water.
The sauce is perfection.....sour cream (or creme fraiche), milk (or buttermilk), caper juice, honey, lemon zest, and fresh chives!! Don't forget the fresh dill when serving.
