Ingredients
1 slice of your favorite bread
1 ripe avocado
1-2 tablespoons mayonnaise (I love Hellmans)
1/4 teaspoon dijon mustard
salt + pepper to taste
Everything But the Bagel Seasoning
optional toppings: sliced tomato, chopped herbs, sliced green onion, or a drizzle of hot sauce
Instructions
1. Toast the bread until it reaches your desired level of crispiness.
2. While the bread is toasting, prepare the avocado and egg salad.
3. Cut the ripe avocado in half, remove the pit, and slice it.
4. Lay the avocado slices onto the toasted bread and use a fork to lightly smash it.
5. Chop the hard-boiled egg into small pieces. You can use a knife or an egg slicer.
6. Transfer the chopped eggs to a mixing bowl and add the mayonnaise, dijon mustard, and salt + pepper. Mix well.
7. Spoon the egg mixture onto the avocado toast, spreading it evenly.
8. Sprinkle Everything But the Bagel Seasoning on top.
9. Slice in half and serve immediately.
